For Poori

2 cups wheat flour
Water (for dough)
Salt (to taste)
Oil (for frying)

For Bhaji

4-5 medium potatoes (boiled and mashed)
1 cup peas
2 medium onions (finely chopped)
2 tomatoes (blended)
1 green chili (finely chopped)
1 tablespoon ginger-garlic paste
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Fresh coriander leaves (for garnish)
Salt (to taste)
Cooking oil

 

Make the Poori

1. Mix wheat flour, a bit of salt, and water in a bowl until it forms a soft dough.
2. Add a teaspoon of oil, knead until soft, cover, and let it rest for 15-20 minutes.

Shape and Fry Pooris

1. Divide the dough, roll into small balls.
2. Flatten each ball into a small disc using a rolling pin.
3. Heat oil, fry pooris until golden and puffed. Set aside.

Prepare the Bhaji

1. Heat oil, add mustard and cumin seeds. When they pop, add onions and green chilies. Cook until onions are golden.
2. Add ginger-garlic paste, sauté for a minute.
3. Add blended tomatoes, cook until oil separates.
4. Add turmeric, red chili, coriander powder, and salt. Mix well.
5. Add mashed potatoes and peas. Stir.
6. Add water, bring to a boil. Sprinkle garam masala, simmer until flavors blend.

Garnish and Serve

1. Garnish bhaji with fresh coriander leaves.
2. Serve hot pooris with flavorful bhaji.
3. Pair with chutney, yogurt, or pickles for a complete meal.
