
“There is nothing even close to this that exists in the world. We are certainly going to challenge the biggies of the world in the cooking space,” Sanandan Sudhir, inventor and CEO of On2Cook said about his innovative cooking device, which he developed and which is now fully ready for the global market. The product has over a dozen patents in India and overseas.
On2Cook is a unique cooking device that integrates the technologies of a microwave, induction oven and flame technologies with AI-backed features like automated stirring, adding oil and water.
“Our ovens use the power of a microwave oven from the top and the power of an induction from the bottom, both simultaneously to make cooking easier and faster,” he said. In the process, the technology replaces multiple equipment which are required in a conventional kitchen like a steamer, oven, grill, microwave, deepfryers and hotplates.
“Our ovens can grill large chicken breasts in under 4 min that too starting from a cold plate. The oven will give a properly cooked chicken breast which is brown from outside. Even a 1 kg cake can be baked in under 6 minutes,” he said.
It’s not just about fast cooking alone, the On2Cook machine helps save a lot of energy and energy bill compared to the conventional cooking method. The device needn’t be switched on all the time like other ovens. The machine starts cooking immediately on switching on; no pre-heating required, thus saving energy bill, Sudhir said.
Kitchens using On2Cook devices do not require a chimney which is another big saving for restaurant owners both in terms of capital cost as well as the power cost subsequently, he said.
Labour costs can also be reduced as these machines are fully automated and can be connected directly with the PoS. Human intervention is limited to putting the ingredients in the right measurement, Sudhir added.
“Our machines save 70 percent in terms of time, 40 percent in terms of energy cost, and 20 percent in terms of yield. The output is also better as 80-90 percent of the vitamins are retained against 40 to 50 percent in conventional cooking,” he said. In terms of space also, Sudhir said that kitchens equipped with On2Cook devices would require one-third of the space compared to a conventional kitchen.
Sudhir said that their target is small and medium restaurants which dishes out up to 250 plates a day. That is the bulk of the industry and the market, he said. Currently, On2Cook has ovens with maximum capacity 4 ltr. 3 to 4 machines can take care of the cooking requirements of a small or medium restaurant which works on single phase 15 to 20 kw capacity. Although the company is in the process of rolling out 10ltr capacity ovens, Sudhir says that the market size of such capacity machines is only 5 percent.
The company has onboarded QSR chains like Wow Momos as its customers and started working with many in the catering, cloud kitchens.
Sudhir said that airports and structures were setting up exhausts and chimneys are difficult are the “sweet spots” for On2Cook as their machines do not require an exhaust or chimney.
